It all starts with the highest quality Valrhona chocolate. A dark chocolate dough is made, which is then filled with precisely measured 60-gram portions of white chocolate.

Rolling the dough into little balls is a skill that takes about three months to master she said. Once the dough is formed, it’s baked to perfection at a secret temperature and duration. The key to the cookie’s unique texture is allowing them to cool slightly after baking, so the edges become crispy while the center remains soft and gooey. While clients may be tempted to grab one straight out of the oven, Vera insists on letting them cool to achieve the perfect texture.

In 2018 we have tried the Van Stapele cookies for the first time and somehow since then when friends visited us in Amsterdam, we would take them to Van Stapele and let them try the cookies too. If you are a sweet tooth, then you definitely will love the cookies.

The chewy and soft texture of the cookie has not changed over time, and the cookies are still beautifully wrapped. One thing that has changed compared to 2018, is the length of the queue! Already early in the morning, people start to queue to buy the cookies.
